Potassium Sorbate is the potassium salt of sorbic acid, a compound that occurs naturally in certain fruits—most notably rowan berries (Sorbus aucuparia), from which sorbic acid was first isolated in the 19th century. Cosmetic-grade potassium sorbate is produced by neutralizing sorbic acid with potassium, resulting in a highly stable, water-soluble ingredient.
